This Moroccan Lean Beef & Chickpea Stew is the kind of meal that brings warmth, flavor, and real nourishment to the table.
It’s made with tender lean beef, hearty chickpeas, tomatoes, zucchini, spinach, and a blend of warm Moroccan-inspired spices that give every bite a deep, savory flavor.
What I love about this recipe is that it feels like comfort food, but it’s still made with wholesome ingredients that support a balanced way of eating.
The lean beef provides plenty of protein along with iron, zinc, and vitamin B12. The chickpeas and vegetables add fiber, folate, potassium, and other important nutrients that help make this stew both satisfying and nourishing.
And even though it’s packed with good ingredients, it doesn’t taste like “healthy food.”
It simply tastes good.
Moroccan Lean Beef & Chickpea Stew Recipe

Cook Time: 35–40 minutes

Serving Size: About 1½ cups
Ingredients
1 pound lean ground beef, 90% lean or higher
1 tablespoon extra-virgin olive oil
1 small yellow onion, diced
3 cloves garlic, minced
1 medium zucchini, chopped
1 can (15 ounces) chickpeas, drained and rinsed
1 can (14.5 ounces) no-salt-added diced tomatoes
1 cup low-sodium beef broth
2 cups fresh spinach
1 teaspoon ground cumin
1 teaspoon smoked paprika
½ teaspoon ground coriander
½ teaspoon ground cinnamon
½ teaspoon ground turmeric
¼ teaspoon ground ginger
¼ teaspoon black pepper
¼ teaspoon sea salt, or to taste
Pinch of cayenne pepper, optional
1 tablespoon fresh lemon juice
2 tablespoons fresh parsley or cilantro, chopped
Instructions
Brown the beef.
Heat a large Dutch oven or deep skillet over medium heat. Add the lean ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat if necessary and transfer the beef to a plate.
Build the flavor.
Add the olive oil to the same pot. Add the diced onion and cook for about 3–4 minutes until it begins to soften. Stir in the garlic and cook for another 30 seconds.
Add the spices.
Sprinkle in the cumin, smoked paprika, coriander, cinnamon, turmeric, ginger, black pepper, sea salt, and cayenne if using. Stir for about 30 seconds to allow the spices to become fragrant.
Add the vegetables and chickpeas.
Stir in the zucchini, chickpeas, diced tomatoes, and beef broth.
Simmer.
Return the cooked beef to the pot. Bring everything to a gentle boil, then reduce the heat to low. Cover and simmer for about 20–25 minutes, stirring occasionally.
Finish with spinach.
Stir in the fresh spinach and cook for another 2–3 minutes, just until wilted.
Brighten the flavor.
Remove the stew from the heat and stir in the fresh lemon juice. Taste and adjust the seasoning if needed.
Serve.
Spoon into bowls and finish with fresh parsley or cilantro.

Give this stew a few minutes to rest before serving. That little bit of extra time allows the spices, tomatoes, beef, and chickpeas to come together even more.
And if you make it ahead of time, don’t be surprised if it tastes even better the next day.
For meal prep, divide the stew into individual airtight containers once cooled and refrigerate until you’re ready to enjoy it.
